Native Pepper and Salt Chicken

Select your favourite sized chicken. Prick 2 lemons a couple of times and insert into the chicken cavity.

Rub a small amount of either Macadamia oil or Olive oil over the chicken and sprinkle with Bakarindi Native Pepper and Salt. Bake or rotisserie till cooked and serve with either baked vegetables, salad or mashed potato and steamed vegetables. Our Mango Ginger Sauce is a great accompaniment to this dish.
